Industry members as well as SANIPES inspectors had the opportunity to evaluate different market forms of Mahi-mahi purchased from a Peruvian fish market for quality  and decomposition levels.  

These were the first courses of their kind in many years and they offered Peruvian industry and inspectors a chance to both learn new sensory skills as well as sharpen current skills while reaffirming the importance of sensory training and skills.

These courses will have a lasting effect on the Mahi-mahi industry in Peru and we hope to conduct courses such as these in the future.
